Ingredients
  

  • 1 lb salmon fillet, skin removed
  • 2 cups cooked sushi rice
  • 1/4 cup Japanese mayonnaise
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 cup cream cheese, softened
  • 2 tbsp chopped scallions
  • 2 tbsp masago (fish roe)
  • Nori sheets, for serving

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cut the salmon fillet into small pieces and season with salt and pepper.
  • In a separate bowl, mix together the Japanese mayonnaise, soy sauce, rice vinegar, sugar, and garlic powder.
  • Spread the cooked sushi rice evenly into a baking dish.
  • Place the salmon pieces on top of the rice, then spread the cream cheese over the salmon.
  • Drizzle the mayo mixture over the top of the cream cheese, spreading it out evenly.
  • Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.
  • Sprinkle the chopped scallions and masago over the top of the dish.
  • Serve with nori sheets on the side.
