- 1 lb salmon fillet, skin removed
- 2 cups cooked sushi rice
- 1/4 cup Japanese mayonnaise
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp garlic powder
- 1/2 cup cream cheese, softened
- 2 tbsp chopped scallions
- 2 tbsp masago (fish roe)
- Nori sheets, for serving
Preheat your oven to 350°F (175°C).
Cut the salmon fillet into small pieces and season with salt and pepper.
In a separate bowl, mix together the Japanese mayonnaise, soy sauce, rice vinegar, sugar, and garlic powder.
Spread the cooked sushi rice evenly into a baking dish.
Place the salmon pieces on top of the rice, then spread the cream cheese over the salmon.
Drizzle the mayo mixture over the top of the cream cheese, spreading it out evenly.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.
Sprinkle the chopped scallions and masago over the top of the dish.
Serve with nori sheets on the side.
