  • For the Curry:
    1 tbsp oil (olive oil or coconut oil)
    1 onion, finely chopped
    3 cloves garlic, minced
    1 tbsp fresh ginger, grated
    1 can (400g) chickpeas (or Great Value Chickpeas), drained and rinsed
    1 can (400g) diced tomatoes
    1 cup coconut milk (optional for creaminess)
    2 cups fresh spinach
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp curry powder
    1/2 tsp turmeric powder
    Salt and pepper to taste
    1/2 tsp chili powder (optional for spice)

    1 cup basmati rice
